Has anyone tried these? I don't have nachos but do have potatoes, avocado, salsa, onions, sour cream, cheese. Chicken is in the oven.
Friends are flying in tonight and they probably won't come if they think I'm going to a lot of trouble. So sitting around in the family room as opposed to a more formal meal would be more appropriate.

I used to go to a pub in So. Cal called Hennessey's and they made a dish called Irish Nachos. What they really were were sliced (slightly thicker than Au Gratin style or scalloped) potatoes either baked or fried until browned (not crispy) smothered in cheese, sour cream, chives, bacon, etc. I don't see why you couldn't do something similar with shredded chicken. Go for it!
