When I use the granny gear with the outer gears on the back there is a clicking noise, I know I am not suppose to do that but is it suppose to click?

Pretty much. The chain is so "crossed" that it is hitting something and trying to climb on it (most cases - another gear, and sometimes the derailleur pulley). Happens to me, and probably happens to everyone, unless your chain stays are like a mile long.

+1. I think this is more of an issue with triple cranksets, but happens with doubles to a lesser extent. The solution is usually to switch to another chainring and click up or down a couple gears to find a similar gear ratio with a straighter chainline.
