Is there a proper way to convert a shimano 8spd casseste and raceface prodigy rings to run as a
    single speed?

No, there is no 'proper' way.

but, if you must do it, there are better ways.

first - the chain ring (what ever size) goes where middle ring is. then get a bunch of cog spacers
from old shitmano cogs. it doesn't matter which ones as long as you get a bunch (check LBSs for worn
out cog sets). get a straight edge and place it along the outside of the chainring back to the cogs.
if you can find one the outer cog from an old 7sp cassette with the teeth ground off is a good thing
to put on first , then place spacers on the cassette till they are ~1mm shy of the straight edge,
put the cog on, fill the cassette with the spacers and put the lock ring on. be aware that Most
derailered mountain bikes have no method for adjusting chain tension!
