Corn Fritters

12 ounces frozen corn -- thawed
1 onion -- chopped
3 teaspoons red bell peppers -- chopped
1 egg -- beaten
2/3 cup self rising flour
1 teaspoon parsley
salt and pepper to taste
oil -- for frying
In a blender or food processor puree the corn, onion and bell pepper.
Put
the mixture into a mixing bowl and add the egg, flour, parsley, salt and
pepper. Whisk together.
Heat 2 tablespoons oil in a non-stick skillet over medium high heat.
Drop
batter by tablespoonfuls into the oil and fry until golden turning only
once. Drain on paper towels and serve.

1 1/4 pounds frozen corn -- defrosted
2 tablespoons all-purpose flour
3 tablespoons green onions -- minced
4 egg whites
3/4 teaspoon cumin
1/2 teaspoon salt
fresh ground black pepper -- to taste
2 tablespoons peanut oil
Combine all ingredients, except peanut oil, in a mixing bowl and mix
well
to combine.
Heat oil in a skillet over medium high heat. Drop 1 tablespoon of the
fritter batter into the skillet and cook, turning, until both sides are
well
browned about 1 1/2 minutes per side. Continue until all batter is gone.
Cooked fritters can be kept warm in a 200 degree oven.

1 1/2 cups all-purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon sugar
2 eggs -- beaten
1/2 cup milk
2 cups whole kernel corn
In a large mixing bowl combine flour, baking powder, salt and sugar. In
a
small bowl combine eggs, milk and corn. Add corn mixture to dry
ingredients
and mix until just barely moistened.
Drop batter by spoonfuls into a deep fryer, with oil at 375 degrees,
and
fry until golden, turning. Drain on paper towels. Serve warm.
