Here is a use for your extra cranberry sauce. I use my crockpot to make this, but I don't see why you couldn't simmer it covered on top or the stove or bake it in the oven.
I mix cranberry sauce with about half as much Dijon mustard. I sprinkle a pound of skinless chicken thighs with salt, pepper, garlic powder, and onion powder. Sometimes I use soy sauce in place of the other seasonings. Yes, of course you could sautee some fresh garlic and onion and add that in place of the powders. I place the chicken in the crockpot, cover it with the sauce, and cook it on low all day. I serve it with long grain and wild rice and a green vegetable.
