I was cleaning my crank rings (FSA Gossamer 50/38) on the weekend, and
I noticed that every 15 teeth or so, the tooth looked like the tip had
snapped off it. It was noticeably shorter than the others, whil still
having a similar taper from bottom to top. It appears to have been
manufactured that way.
Question is... why? What is the benefit of having these 'shorter'
teeth on your chainrings?

It allows for smoother shifting on the upshift. You'll notice that
there are ramps and pins at similar spacings
