  1. Crisp Pickle Slices

    20 Servings
    About 4 pints Crisp Pickle slices.

    8 cups sliced pickling cucumbers
    3 cups sliced onions
    3/4 cup sliced sweet green peppers
    2 cloves garlic
    3 tablespoons kosher salt
    cracked ice
    2 1/2 cups sugar
    1 1/2 cups cider vinegar
    1 tablespoon mustard seed
    3/4 teaspoon celery seed
    3/4 teaspoon turmeric

    In large glass or stainless steel bowl, combine cucumbers, onion, green
    pepper, garlic, and salt, mix well; cover with cracked ice. Let stand 3
    hours; remove garlic and drain well. In sauce pan combine sugar, vinegar,
    mustard seed, celery seed, and turmeric; add drained cucumber / onion /
    green pepper mixture and bring to a boil. Pack mixture and liquid into hot
    sterile pint jars, leaving 1/2 inch head space. Adjust lids. Process in
    boiling water bath for 7 minutes.
