  1. Crock Pot Split Pea Soup with Soy Sausage

    1 pkg split green peas, cleaned, rinsed and drained 8 cups water, vegetable , chicken or beef broth
    3 large carrots diced 2 large stalks celery diced 1 large onion diced 2 garlic cloves minced several
    fresh basil leaves chopped 1 Lb tube soy sausage , crumbled into small chunks salt, pepper, Italian
    seasoning to taste

    Sometimes we like to use soy products in our recipes. This soup is simple and exceptionally tasty.
    Place all in crock-pot, cover cook high until everything is tender- 4 to 6 hours. Season to taste
    with salt and pepper etc. Soup will thicken more when cold. Yield: 8 to 10 servings
