  1. Crockpot Vegetable Chicken Barley Stew

    1 1/2 lbs of chicken breast, cut into cubes 1 medium size onion, chopped 1 medium bag of frozen
    mixed vegetables 1 1/2 cups of water 1 teaspoon salt 1 teaspoon chopped fresh thyme leaves or 1/2
    teaspoon dried thyme leaves
    1/4 teaspoon pepper 2 cans (14 1/2 ounces each) ready-to-serve chicken broth 2 cans (14 1/2 ounces
    each) diced tomatoes with garlic, undrained 1 can (8 ounces) tomato sauce
    2/3 cup uncooked barley

    Mix all ingredients in a large crockpot and cook on low heat for about 6 to 8 hours or until the
    vegetables and barley are tender.

    This recipe also works well when cooked on top of the stove in a large soup pot.
