Olivia Fullerton Babb's Date Pinwheels
----FILLING----
3 3/4 cups pitted dates
1 1/2 cups sugar
1 1/2 cups water
1 1/2 cups pecans; chopped
----DOUGH----
1 1/2 cups shortening
3 cups brown sugar
5 large eggs; well beaten
6 cups flour; sifted
3/4 teaspoon salt
3/4 teaspoon soda
Cook dates, sugar, and water over low heat until thick (about 10
minutes). Add pecans and cool.
Cream shortening, add sugar gradually, add well beaten eggs, mix well
and add the rest of the ingredients. Chill thoroughly (overnight, if
possible).
Divide into two parts. Roll the dough on well floured waxed paper
until it is about 1/4 inch thick. Spread date mixture on dough and
handle carefully as you roll it like a jelly roll. It helps to flour a
flat knife and gradually work it under the dough as you roll to keep
it from tearing. Chill overnight.
Slice roll crosswise with a sharp knife and bake at 400o for 10 to 12
minutes. These burn easily, so watch carefully. Makes about 5 nice
sized rolls.
Tracy's Notes: Grandmother Babb always made these for Xmas and
everyone seems to love them.
