  1. Yes, Wayne, I'm going to turn into a tilapia! Hope they are pretty fish
    before they are filleted ๐Ÿ™‚

    I'll pan fry them using my trusty slightly spicy Zatarain's fish fry coating
    in just a little bit of oil. As a side, I'm going to prepare a cup of
    long-grain white rice in 2 cups chicken broth. I'll steam a little broccoli
    and mix it in with the rice and I plan to grate about 1/2 cup of cheese -
    pretty much decided on Gruyere - into the hot rice until it's nicely melted
    and gooey-yummy!

    Should I serve more broccoli on the side or would that be broccoli overkill?
    (I love broccoli!) I have other veggies I can cook if I feel the need - I
    have some nice fresh zucchini. I have frozen leaf spinach. I have frozen
    yellow crookneck squash slices (fresh crookneck is petering out this time of
    year).

    There are many pictures of tilapia, some not so pretty. I think this one
    is pretty. Reminds me of an aquarium fish called a danio.

    I love rice, broccoli, and cheese together. I first had it in a vegetarian
    restaurant years ago. It was done with brown rice, but I think it's
    equally good with long-grain white rice.

    Yep, IMHO, more broccoli would be overkill. I detest zucchini, and leaf
    spinach would be just too green for this plate. The yellow crookneck
    squash should be just right.
