  1. Tossed salad with spinach, pea sprouts, blanched chayote, avocado, baby
    corn, carrot shreds, and halved grape tomatoes. The dressing is made from
    lime juice, orange juice, safflower oil, dry mustard, salt, pepper, and a
    tiny bit of cayenne.

    Also two pork chops browned and then simmered in Trader Joe's "Cuban Mojito"
    sauce. I've sung the praises of that sauce here before; it's one of Trader
    Joe's great gifts to the world. To round off the meal I'm having rice with
    "Caribbean Style" black beans. (I don't know what that last thing means;
    it's just a can of beans I got from Safeway.)

    To drink, I'll have iced tea with a tablespoon each of lemon syrup and
    tamarind syrup.

    Since I'm working tonight, I'll be making all that stuff ahead of time and
    taking it in to work with me. I won't actually be eating dinner for another
    twelve hours or so.
