  1. Lesse. In the deep freeze I've got some andouille sausage, chicken and
    about 9 medium shrimp and some crawfish tails. I've also got some
    Zatarain's Jambalaya in the box in the pantry. I'll be having jambalaya
    tonight with the sausage, a bit of chicken and the shrimp. To go with, I'm
    making a Bayou Salad. Recipe was found awhile back on the cajun-recipes.com
    website. The crawfish tails will go into the salad.

    Bayou Salad

    3 cups cooked rice
    2 cups (8 oz) crawfish tails
    2 cups sliced celery
    1 cup frozen green peas, thawed
    1/4 cup diced pimientos
    1 cup mayonnaise
    1-1/2 tbs lemon juice
    1 tsp salt
    1/4 tsp ground black pepper

    Combine rice, crawfish, celery, peas, and pimientos. Blend remaining
    ingredients; toss lightly with rice mixture. Chill. Serve on salad greens,
    if desired.

    Makes 6 servings.

    I found some gorgeous, huge globe artichokes at Kroger for $1.69, so
    we're having artichokes that have been streamed in white wine and lemon
    juice, with a choice of garlicy aioli or melted butter for dipping.

    Alongside, a bruschetta topping of fresh, roasted, and sun-dried
    tomatoes with fresh basil and rosemary, on toasted slices of TJ's
    asiago parmesan bread, topped with shavings of TJ's grana padana
    parmesan.

    And a big salad with all the odds and ends of greens from the fridge,
    plus endive, apple, celery, grapes, vidalia onions, and candied
    walnuts. I'm going to make a buttermilk-lemon-dill dressing for it I
    think.

    Ummy yummy dinner!

    Oh dear Gawd does that sound delicious. I can't wait until my refrigerator
    gets here.
