also, is the added sugar just for flavor or does it serve a
greater purpose

I'm not sure what is meant by "added sugar". Dried fruit has
more of a concentration of sucrose and fructose because the
water has been reduced, for the same amount of weight.
Sometimes I have seen "candied" items which have a sugar
glaze, such as candied genger.

Perhaps check out dried cranberries and dried blueberries.

What's their glycemic load when dried, in your estimation?
