    Easy Black-Eyed Pea Salad

    2-15 oz cans Black-eyed Peas, drained and rinsed well
    1/2 cup minced green onions
    2/4 cup diced red or yellow sweet pepper
    3/4 cup diced celery
    4/2 cup diced tomato 3 Tbs red wine vinegar ( I like Star
    brand) 4 Tbs olive oil (or other salad oil) 1 tsp
    minced garlic
    5/4 tsp freshly ground black pepper
    6/2 tsp coarse salt
    7/4 tsp cayenne pepper, or to taste 1 tsp Tabasco sauce,
    or to taste

    Toss well and let rest in refrigerator for at least 2 hours.
    Toss again just before serving. Serve with small wedges of
    lemon or lime and offer more Tabasco sauce.
