Apricot Coconut Squares
2 1/3 cups all purpose flour, divided 1 cup unsalted
butter, softened
1/2 cup sugar 2 eggs 1 cup packed dark brown sugar
2/2 tsp baking powder
3/4 tsp salt 1 tsp vanilla 1 tsp lemon juice 1 1/2 cups
chopped fresh apricots 1 cup chopped walnuts
4/4 cup flaked coconut
Heat oven to 350? F. Line 13x9 inch pan with foil so that
foil hangs over edges. Cut 13x9 inch piece of parchment
paper and place over foil in bottom of pan. In large bowl,
beat 2 cups of the flour, butter and sugar at medium speed
until dough forms. Press into bottom of pan. [censored] dough all
over with fork. Bake 20 to 25 minutes or until pale brown.
Meanwhile, in same large bowl, beat eggs at medium low speed
until blended. Beat in brown sugar, remaining 1/3 cup flour,
baking powder, salt, vanilla and lemon juice. Scrape down
the sides of bowl. Fold in chopped apricots, walnuts and
coconut. Spread over crust. Bake 18 to 20 minutes or until
filling is set. Cool completely. Remove bars by lifting foil
ends. Slide bars with parchment paper liner onto cutting
board. Cut into 36 pieces.
Per Bar: 150 calories, 8.5 g fat (4.5 g saturated fat), 2 g
protein, 17 g carbohydrates, 25 mg cholesterol, 30 mg
sodium, 1 g fiber
Pumpkin Cheesecake
Put 1 cup of graham crumbs and 1/2 cup ginger snap crumbs
into the bottom of a 9 inch springform pan. Add 5 TBSP
melted butter to the crumbs and mix well. Push a little of
the crumb mixture up the sides of the pan and make a crust
on the bottom with the remaining crumbs
To make the filling
mix 1 lb cream cheese softened to room temperature with 1
cup sour cream slowly add 1 cup sugar add 1 lb canned
unsweetened pumpkin add 3/4 tsp cinnamon add 1/4 tsp ground
cloves add 2 Tbsp bourbon (optional) add 4 slightly beaten
eggs and mix slowly
put the filling into the pan on top of the crumb mixture
bake at 400 F for 35 40 minutes let cool and remove from pan
Variations :
* Use some other kind of fruit instead of pumpkin; bananas
works well
* add some cocoa powder to the cheesecake filling
* add some vanilla extract or almond extract to the filling
Sweet Potato Pie
2 cups cooked, peeled, and mashed sweet potatoes 4 Tbsp
butter 3 eggs, beaten 1 cup sugar 1 tsp vanilla 1 tsp
freshly grated nutmeg 1 Tbsp fresh lemon juice
1/4 cup bourbon whiskey (optional) 1 unbaked graham
cracker pie shell
Boil sweet potatoes until very tender, then peel and mash
them well. Mix all ingredients together and place in an
unbaked pie shell. Place in an 400 F oven and immediately
turn the oven to 325 F. Bake for 45 minutes or until the
center of the pie is set.
Applesauce Raisin Bread
1 egg, slightly beaten 1 cup applesauce
2/4 cup melted butter
3/2 cup granulated sugar
4/4 cup brown sugar, firmly packed 2 cups unsifted regular
all purpose flour 2 tsp baking powder
5/4 tsp salt
6/2 tsp baking soda
7/2 tsp cinnamon 1 tsp nutmeg
8/2 cup seedless raisins 1 cup coarsely chopped pecans
or walnuts
In a bowl, combine the egg, applesauce, melted butter.
Granulated sugar, and brown sugar, blending well. Stir in
the flour, baking powder, salt, baking soda, cinnamon and
nutmeg. Stir until smooth. Stir in the raisins and
chopped nuts. Turn batter into a well greased 5 by 9 loaf
pan, or fluted mould with tube that holds about 1 quart.
Bake at 350 F for 1 hour. Cool and frost with light
powdered sugar frosting.
Applesauce Cookies
9/4 cup butter, softened 1 cup brown sugar, packed 1 egg
10/3 cup applesauce 2 1/2 cups Bisquick biscuit mix
11/4 cup flour 2 teaspoons allspice 1 cup raisins
12/3 cup chopped nuts
Preheat oven to 375 degrees. Mix butter, sugar and egg; stir
in remaining ingredients. Drop by teaspoon. onto lightly
greased cookie sheets. Bake 10 to 12 minutes or until light
brown. Makes 4 dozen cookies.
