  1. Easy Pumpkin Spice Cobbler

    3 large eggs beaten
    1- 15 oz can of pumpkin
    1- 12 oz can evaporated milk
    1-cup sugar
    1/8 tsp salt
    1 1/2 tsp ground cinnamon
    1 tsp ground ginger
    1 tsp vanilla extract
    1 box Betty Crocker spice cake mix
    1 1/4 cup melted butter or margarine
    1 cup chopped pecans (optional)

    Mix first 8 ingredients in large bowl Pour into a 13x9 glass baking dish.
    Sprinkle 3/4 of package spice cake mix evenly on top of mixture. drizzle
    with melted butter Bake 350* preheated oven for 30 minutes top with
    chopped pecans and bake additional 15 minutes **note ** if you do not use
    nuts bake the additional 15 minutes anyway
