Family Get-Together Breakfast

2 Tbsp. butter
2 large apples, peeled, cored and cut into thin wedges
1 1/2 cup golden and/or dark raisins
1/4 cup firmly packed light brown sugar
1/2 tsp. cinnamon
4 eggs
1 cup milk
1 cup flour
1 Tbsp. sugar
1/8 tsp. salt
1 Tbsp. grated lemon or orange rind
Confectioner's sugar (optional)
Lemon juice (optional)

Melt butter in large skillet. Add apples, raisins, brown sugar and
cinnamon; saute until tender. Reserve. Combine eggs, milk, flour, salt,
sugar, salt and orange rind in a blender or food processor. Whirl until
smooth. Butter inside of 12" skillet (OR 10" - see *note) with an oven
proof handle. Pour in batter. Spoon raisin-apple mixture evenly over top.
Place skillet in preheated 425 F oven for 20 minutes or until pancake
is puffy and golden brown. Sprinkle with confectioner's sugar and lemon
juice, if you wish. Cut into wedges. Serve warm.

*note: If you use a 10" skillet, bake 25 minutes.
