Yeah I posted a thread for this too.

After stage 4 you will not be allowed to change your roster anymore so figure out who you want right now while we are in the "practice mode".

From what I understand, the bench guys are spare cyclists you can throw in your starting line-up but only the guys in your starting lineup at the end of a stage earn you points.
