  1. These are a favorite at our house and very easy in the crock
    pot or slow cooker!

    Filled Peppers

    1 pound ground beef, or pork, or a mixture of the two 1
    small onion, chopped 1 egg
    1/2 cup rice Salt and pepper, to taste (I usually use about
    1 tsp salt and 1/2 tsp pepper) 2 green peppers 2 cups
    tomato juice

    Mix ground meat, onion, egg, rice and seasonings together
    until well mixed. Cut peppers in half lengthwise and discard
    stem and seeds. Fill peppers with meat mixture and place in
    crock pot. If you have extra meat mixture, just shape into
    balls and put in crock pot with peppers. Cook in crock pot
    on low 6 to 8 hours.

    **You can thicken the tomato juice with cornstarch and water
    if desired and serve over peppers.
