  1. As promised, here's the recipe.

    Semmeln (rolls)

    (that should yield 20 rolls)

    The dough :

    500 grams flour
    30 g yeast
    1/4 litre warm milk
    50 g butter
    1 egg
    1 teaspoon salt
    a pinch of grated pepper
    a pinch of grated nutmeg

    -----------------------

    2 egg yolks
    2 tablespoons warm milk
    optional :
    poppy seeds or sesame seeds

    Put flour in a bowl.
    Form a depression in the middle and
    crumble in the yeast and por the milk in.
    Mix with some of the flour in the bowl.
    Cover and let it rest for 15 minutes.

    Melt the butter and mix in egg, salt, pepper
    and nutmeg.
    Pour the mix into the bowl and make a smooth
    dough.
    Cover the bowl again and let the dough rest for
    30 minutes.
    Spread butter on baking tin (or use baking paper).

    Cut dough into 40 gram pieces.
    Form the pieces into balls and put on the tin.
    Flatten a little with your hands.
    Cover again and let them rest for another 20 minutes.
    Heat oven to 200 deg Celsius.
    Mix egg yolks with milk baste rolls with the mix.
    (Optionally : Now sprinkle poppy or sesame seeds
    on them).
    Take a sharp knife and cut in the loaves 1.5 - 2 cm
    deep.
    The cut should look like an "S" with another "S" rotated
    90 degrees clockwise. Or cut a cross.
    Put an ovenproof cup with water in the oven.
    Bake the rolls on the second rail from the bottom
    for ca. 20 minutes.
