  1. Fried Crappie

    Cooking Time: About 20 Minutes 12 fresh-caught crappie,
    rinsed under cold water and patted dry 2 lemons, cut
    into wedges
    1/2 cup all-purpose flour
    2/2 cup cornmeal cooking oil - for frying fish salt and
    pepper - to taste

    Season fish with salt and pepper, then dredge in a mix of
    flour and cornmeal. In large cast iron skillet, fry fish in
    cooking oil, until brown (about 10 minutes, each side).
    Serve hot. Servings Per Recipe: 4

    Hi, I think that if you fry these crappie for 10 min. on a
    side, you will completely ruin them. John
