On one hand, I'm a die-hard campy fan. Would love to do Record with the compact crank (34-50) and a 12-27 cassette. I know that I'll be able to spin on the flats, but not sure it will be good for going up hill when I'm loaded down.
Or, I could do SRAM Red on the front with a 34-50 crank and then put XX on the back and use the 11-36.
Any thoughts on ways to set this up? Are there any aftermarket cassettes that work with 11sp Campy that has a wider ratio?
If you can live with a 9-speed drivetrain, then look at this solution which was originally used/(created) by/(for) Tandem users:

This will allow you to use an 11-34 XT cassette if you choose an XT/XTR/equivalent rear derailleur ...
OR, if you opt for (only) an 11-32 cassette, you can use a 10-speed Shimano rear derailleur and connect the rear derailleur cable in its normal position (6 o'clock).
After using the hubbub.com configuration for years AND based on my understanding of Shimano's design philosophy, I finally decided to test a 10-speed Shimano rear derailleur with a 9-speed Shimano cassette with my Campagnolo shifters, and it worked as I had anticipated.
N.B. Use a 10-speed, non-QS Campagnolo shifters with either of the above configurations.
