    Gingerbread Men

    1/2 cup plus 1 tablespoon shortening
    2/2 cup brown sugar 2 eggs 1 small box butterscotch instant pudding mix 1 1/2 cups flour 1 1/2
    teaspoons ginger
    3/2 teaspoon cinnamon
    4/2 teaspoon baking soda

    Cream the shortening and sugar, add eggs and mix well. Add dry pudding mix and flour and spices. Mix
    well. Roll the dough to about 1/4 inch thick and cut with a gingerbread man cookie cutter. Bake on
    greased cookie sheet for 10 to 12 minutes at 350 degrees F.
