  1. Does the GI of a food change (possibly lowers) if you consume it with
    other food?

    For example, a baked potatos GI would be higher than a baked potato
    eaten with sour cream?

  4. I appreciate the response Bob, but I'm not trying to do anything. I
    was reading several different posts of people basing their entire diets
    on the GI of foods. I thought that was ridiculous, considering there
    are so many variables of how food affects each individual.

    Sorry my response was so terse. We are on the same wavelength. My job
    entails trying to deal with childhood obesity at the population level,
    not individual level. Hence the GI of food becomes irrelevant in the
    face of the "system" for the population. People are couped up (for a
    range of reasons) and food is cheap (for most people); best way to
    fatten an animal.
