Halibut with Ham and Ginger
Serves 4
INGREDIENTS:
4 6-ounce halibut fillets
olive oil for drizzle
salt and pepper to taste
1 cup diced deli ham
3-4 tsp diced or grated fresh ginger
3/4 - 1 cup chopped green onion
2-3 Tbs butter for sauteing
PROCEDURE:
Pre-heat to 400 degrees, put the halibut fillets in a baking
dish and drizzle them with a little olive oil and salt and pepper to taste.
Peel and grate 3-4 tsp of fresh ginger, chop about ¾-1 cup of green onions
and dice 1 cup or so of deli ham. When the oven has reached the proper
temperature, pop the halibut into the oven to roast and, depending on the
thickness of the fish, they'll take around 10 minutes to bake. While that's
happening, saute the diced ham in a little butter, on medium high heat,
until it starts to brown. After a couple of minutes, add the grated ginger,
stir that around, add the chopped green onions and turn the heat off. When
the fish is cooked to your liking, place it on plates and top with the diced
ham, green onions and ginger.
