I have a threaded fork but I am thinking about getting one of the threadless headset adapters so that I can use a threadless stem. I need (want) to do some bar height adjustment and there aren't any quill stems out there with different angles (that I can find). Has anyone out there used such an adapter? Any words of caution? Any problems with them?

Why not a quill stem with adjustable rise? They're heavy but it sounds like that might do the trick for you.
The adapters work just fine.

There are a bunch of adjustable quill stems available from manufacturers such as Kalloy and Zoom among others. (see links)

No firsthand experience with them, but they may be a cleaner setup.

I just got a Profile H2O quill stem and is is quite well made and comes in a variety of lengths and at least two angles (I got a 90mm74deg). It also has a removable faceplate so it is a snap to change.
