I've recently been thinking about taking out a spacer or two to get a little lower. Should I just trial and error it and see what works for me and what will generate the most power? Any other tips/suggestions?

Yes -- trial & error ...
Stack the "removed" spacers above the stem on the steerer ... you may decide that you don't like the new position.
