I'm not real up on MTB's especially good ones like the ones you're wanting advice, so maybe someone with more knowledge will find this post and respond.

What I can tell you is that I don't like bikes with odd ball components with questionable quality, in your case the Cube Stereo 120 has some Cube components which usually means you won't be able to find replacement parts like spokes for the wheels; thus of the two I like the Canyon because it doesn't use odd ball components.
 
I would choose the Canyon. I think it would be easier and less expensive to maintain and repair. Nothing like spending that much money on a bike and then not being able to find affordable parts when needed.

I agree, I also trust the company and have had positive experiences with their products. On the other hand Cube seems to specialise in making cheaper, affordable bikes which would make avoid this company if looking to spend several thousand.
 
First off, if you need someone's opinion when you are talking about bikes like that, then you should probably not be looking at bikes that high.

The Canyon is an enduro bike, the Cube is an all mountain. Which one you should get is really based on what style of riding you are doing.
 
Yeah the Canyon wouldn't need as much repair work, and would be a lot less difficult to maintain. The price is gonna be pretty good for a MTB anyway. I mean you get what you pay for.
