Gawd... Time is flying. It's after midnight and I am having a few friends
over on Monday for a real casual get together. I am completely unprepared.
I don't have a lot of time to get the food together either. I picked up
some lucious looking strawberries from Theiss Farms (thank you Brian R.).
I bought a huge black forest cake at Sam's Club. I've had them before and
they are really, really good IMO. Josh is home and Nick is coming over
tomorrow (Sunday) to spend the rest of the weekend. They will help.
Here is what I'm thinking.
Grilled pork steaks and grilled chicken breasts. I'll make burgers for the
2 munchkins that will be in attendance. I've bought the dessert and will
also have fresh strawberries. I'll make a pound cake and some whipped
cream. For sides I'm thinking I'll make some cole slaw (cream style),
grill some sweet corn, zucchini and fresh tomatoes. I'll make my own
potato cucumber salad (recipe below). *If* there is time I'll make some
blueberry ice cream (thank you Margaret). I can tell my diabetes is
working me because of all the sweet things I want to make 😉

Potato Cucumber and Dill Salad
Amount Measure Ingredient -- Preparation Method

3 large Idaho® Potatoes -- unpeeled and thinly sliced
1/4 cup rice wine vinegar
1 1/2 tablespoons Dijon mustard
1/4 cup canola or vegetable oil
1/2 cup chopped fresh dill
OR
1 tablespoon dried whole dillweed
1/2 teaspoon salt
1 large cucumber -- unpeeled and thinly sliced
Place potato slices in a 9-inch square microwave-safe baking dish; cover
with microwaveable plastic wrap and microwave at HIGH 9 to 11 minutes, or
until tender, stirring gently every 3 minutes. Combine vinegar, mustard,
oil, dill and salt in a small jar. Cover tightly and shake vigorously.
Pour vinegar mixture over potatoes. Cover and refrigerate until chilled.
Gently mix in sliced cucumber before serving.
