Honey Glazed Apples
Honey and lemon give the apples a [censored]-sweet shine coat; food coloring
adds
a rosy glow.
3 large baking apples
1/2 cup water
1/4 cup honey
1/2 tsp. grated lemon rind
Few drops of red food coloring
Pare, halve, and core apples; place, cut side down, in shallow baking
dish. Mix water, honey, lemon rind, and food coloring in 1-cup measure;
pour over apples; cover. Bake in hot oven (400 ), basting once or twice
with syrup in dish, 30 minutes. Uncover; baste apples again; bake 15
minutes longer, or until tender but still firm enough to hold their shape.
Cool apples in baking dish, basting once or twice to make a rich glaze.
Garnish with a sprig of mint, if you like. Serve warm. Weight Watcher's
portion: one-half apple 98 calories.
