    herbed (~7 varieties). I have more bottles of vinegar than I could
    shake a stick at!

    Ultimately it depends on what you're doing; I'm also in the "more
    bottles of vinegar than you can shake a stick at" category (and
    homemade vinegars are there on the list of things to do...), but the
    only ones I use on a regular basis are (in order) cider, balsamic, and
    rice vinegars, with raspberry a distant fourth, with white vinegar used
    mainly to clean out the coffee pot.
