Integrating heart monitor into training?

Just got a Polar S520 and have been riding regularly since August 2004 (150 miles/week avg). Anyway getting into the routine of riding my rollers and soon to own in a few days Kinetic Road Machine, 2 days on (1 hour ride), 1 day off. My current age is 47, 145 lbs, resting heart rate of about 45-50. Best advice for using the heart rate monitor in the off-season? My first 1 hour roller ride using the S520 avg about 150 heart rate, moderate intervals at about 160 bpm and peaked on a 1 min sprint to 177 bpm. What should I be looking for? How to best use heart rate monitor? Plan to start racing in 2005.
