Kentucky Bourbon Pie
Serves 8

1 9-inch unbaked pie shell
2 eggs -- beaten
1 cup sugar
1/2 cup melted butter
2 tablespoons bourbon or 2 teaspoons vanilla
1/4 cup cornstarch
1 cup chopped pecans
1 cup semisweet chocolate morsels
Whipped cream
Heat oven to 350 degrees. Beat eggs slightly. Add sugar, butter, bourbon
and cornstarch until well blended but not foamy. Pour nuts and morsels
into pie shell. Pour egg mixture over the top. Bake 45 minutes. Cool one
hour. Best if served warm with bourbon-laced whipped cream.
Serves six to eight.
Recipe Notes
This pie really is a pecan pie with chocolate chips and bourbon added.
Substitute vanilla for the bourbon if you wish.
