Kofta (Meatballs)
Makes 6 servings
A popular dish served with basmati rice.
Meatballs:
1 onion, cut in quarters
4 cloves garlic
11/2 cups packed fresh cilantro
1 tablespoon cumin seeds
11/2 teaspoons salt
2 teaspoons black pepper
11/2 pounds ground beef
Tomato Sauce:
2 tablespoons vegetable oil
1 onion, finely chopped
4 cloves garlic, chopped
1/3 cup tomato paste
1 teaspoon cumin seeds
1 teaspoon salt
1 teaspoon curry powder
1/8 teaspoon cayenne pepper
3 cups water
To make meatballs: In food processor, place onion, garlic, cilantro,
cumin, salt and pepper. Process until very fine. With hands, knead mixture
into ground beef until meat is smooth. Form into 16 round, flat patties,
about 3 inches in diameter. To make sauce: Heat oil in deep frying pan.
Saute onion until browned; add garlic and tomato paste, and saute 5
minutes. Add cumin, salt, curry powder, cayenne pepper and water. Add beef
patties and gently spread in pan so they are completely covered in sauce.
Simmer uncovered 30 minutes or until patties are cooked and sauce is
thickened. Do not stir or patties will break apart.
