The neighbors got together for the usual Friday night extravaganza. This was the first backyard BBQ (cook and eat outside) of the season, and folks brought their own meat (mostly chicken) to grill. i made lemongrass grilled chicken kebabs, which turned out quite nicely. The SO suggested a dipping sauce off the top of his head, which was met with positive responses. This is the rough recipe (amounts approximate):
juice of 1 lime 2 tablespoons hoisin sauce about 1/2 tsp. sambal oelek (chile paste), or to taste
Chile wimps can probably shake in a couple of red pepper flakes or wave a dried red chile over the top of the bowl.

That does sound good....and strangely enough, I can get the Hoisin sauce and the chili paste in Honduras (large ex-pat Chinese community here)

Actually, this recipe (while invented on the spot) did not come out of a vacuum. Many Vietnamese restuarants serve something similar as a dipping sauce with spring rolls. I think they are more likely to use rice wine vinegar as the sour component, rather than lime juice. They would use more hoisin sauce than the proportions shown above. And they might add some finely chopped peanuts.
