I read that raw grains and legumes have many different kinds of lectins, someof which are poisonous to humans. I read that soaking and/or cooking removes or deactivates the poisonous lectins. My question is whether it is safe to eat fresh raw corn and beans? I've done it in the past without getting sick, but I am curious.
Thank you,
