No such thing as a low fat peanut however Dry Roasted will
have a little less fat than the others:
Here you go 2 recipes from my file.

2 c. brown sugar
1/4 c. vinegar
2/8 c. water
3/4 c. peanut oil 1 c. shelled roasted peanuts
4/2 c. toasted sesame seeds
Mix together sugar, vinegar, water and cook slowly until
syrup is thick, about 45 minutes (265 degree F on candy
thermometer). Test: drop a bit in cold water. Gather syrup
with fingertips. It should form hard ball. Oil a 9 x 9 inch
pan with peanut oil and sprinkle with peanuts and half the
sesame seeds. Pour over this candy syrup. Sprinkle with
remaining sesame seeds. Cut into desired lengths before
candy cools completely. Yields 1 1/2 pounds.
One more:
5/4 c. butter
6/2 c. light corn syrup
7/2 c. sugar
8/4 c. light brown sugar 1 to 1 1/2 c. peanuts (or pecans
or cashews)
9/4 tsp. soda
Grease a 9 x 13 inch pan. Place butter, syrup, and both
sugars into a 1 quart saucepan. Stir and boil to 280
degrees. Working quickly, remove from heat; add nuts and
baking soda. Stir and spread with wooden spoon. (Stores
very well.) One time I made it and forgot the baking soda,
it was delicious, just like a Planter's peanut bar!

well low fat but high sugar is there really a difference?
the butter is what gives it flavor.
