----------------------------3/4 cup buttermilk
2 cups cottage cheese
4 ounces cream cheese, at room temperature
2 ounces soft goat cheese at room temperature
2 ounces mozzarella cheese grated
2 ounces asiago cheese, grated
2 ounces parmesan, grated
3/4 pound penne, cooked and drained
cayenne
salt and freshly ground black pepper
1/2 cup bread crumbs
Preheat the oven to 350 F. Lightly wipe an 8 x 11 x 2 inch baking dish
with vegetable oil. In a blender or food processor, place the
buttermilk, cottage cheese, cream cheese, goat cheese, mozzarella,
asiago and half the parmesan, and blend until smooth.Place the cooked pasta in a large bowl, add the cheese mix and toss
until well coated. Season with cayenne and salt and pepper to taste.
Place the pasta in the baking dish; top with the bread crumb and
remaining parmesan. Place in the oven and bake until bubbly, 20 - 25
minutes. Place under the broiler for 3 - 4 minutes until the top is
golden brown.Serves 6.
