tastes really good. I want to make a candy out of it.
Malt balls are a type of nougat confection Naturally commercially they're made entirely by machine,
tedious to make at home, so to eliminate the ennui I'd form the nougat into bars.
Chocolate Malt Balls
1/3 cup cocoa 1 1/2 cups sugar
2/2 tsp. salt
3/2 cup malted milk powder
4/3 cup milk
5/4 cup light corn syrup
Mix cocoa, sugar and salt in a pan. Dissolve malt powder in milk. Blend into the cocoa mixture along
with the syrup. Cook to medium soft ball stage (236 degrees) or until syrup forms a soft ball in
cold water. Drop by teaspoon on waxed paper. When cooled slightly, form each into a ball and roll in
chocolate shot.
