Marvellous Macaroni Salad

Potluck Salads Side Dishes Favourites
Amount Measure Ingredient -- Preparation Method -------- ------------ --------------------------------
1 cup mayonnaise
3/4 cup Bick's Corn Relish 1 tsp salt 1 tsp sugar
4/4 tsp pepper 4 cups cooked macaroni 1 cup sliced celery
5/2 cup chopped red pepper
6/3 cup chopped onion 2 hard-cooked eggs, chopped 2 tbsp finely chopped fresh parsley
Combine first 5 ingredients for dressing. Mix well. Combine remaining ingredients in a large bowl.
Add dressing. Toss gently to thoroughly coat vegetables with dressing. Cover with aluminum foil and
chill at least 2 hours to blend the flavours.

NOTES : I sometimes add cubes of cheese. When red peppers are too expensive, substitute green pepper
or Bick's chopped pimento.
