  1. Mary's Ham Dumplings

    Serves 10
    Published in: Journal Sentinel

    5 large baking potatoes
    Salt to taste
    1 tablespoons solid vegetable shortening
    1 1/2 cup flour
    201-inch cubes of ham (3/4 to 1 pound)
    2 eggs -- beaten
    2 tablespoons milk

    Peel potatoes, cut into cubes, then boil with salt until done. Drain, then
    mash while still warm. (If desired, leftover mashed potatoes can be used.
    You will need about 6 cups .) When potatoes are cool, work in shortening
    and flour. If too dry, add a little more shortening. Dough should be
    somewhat firm and not sticky. Preheat oven to 350 degrees. Shape into
    balls larger than a golf ball. Holding the ball of dough in your hand,
    insert a piece of ham into the center, then wrap the dough around ham.
    Place dumplings side by side in a greased 13-by-9-inch baking dish. Bake
    45 to 60 minutes or until dumplings are done. Before removing dumplings
    from oven, beat eggs with milk and carefully spoon over baked dumplings in
    the pan. Bake 2 to 4 minutes or until eggs are set.

    Makes 20 large dumplings
