Can anyone recommend a lean beef cut for making jerky? I've been using top round / london broil with
good results, but there is still more sinewy fat in it than in the store-bought jerky.

Beef rump roast. Sometimes I buy round steak for making jerky when it is on sale cheap enough.

Bottom round roast (usually square cut when buying from supermarket) works best for me. I keep
telling myself that I'll never use top round again - for the reasons you specify - but when its
under $2/lb ...
