  1. Mega Muffins

    1 cup All Bran or Bran Buds, etc.
    3/4 cup flour
    4/4 cup sugar (a sugar substitute may be used) 1 tsp. baking soda 1 tsp. cinnamon
    5/3 cup honey
    5 (1.5 oz.) jar baby food prunes 2 Tbsp. molasses (dark) 2 egg whites, lightly beaten 1 cup
    buttermilk
    6/4 cup drained crushed pineapple
    7/2 cup raisins or dried cherries or dried cranberries, etc.

    Combine first 5 ingredients in a large bowl. In a small bowl, combine next 5 ingredients and mix
    well. Add honey mixture to flour mixture, stir well. Stir in pineapple and raisins. Cover and
    refrigerate overnight. Spray large muffin tins with a non-stick cooking spray. Spoon in the batter-
    around 3/4 full. Bake at 375 degrees for 22-25 minutes or until a toothpick comes out clean. Cool 5
    minutes. Remove from the pan.

    Each large muffin contains: .8 grams of fat and 283 calories.

    You may use a smaller muffin tin. Just keep an eye on your baking time.
