Mexican Stuffed Mushrooms
12 lg. mushrooms, 2 1/2" diameter
1/3 cup thinly sliced green onions
1 garlic clove, minced or pressed
3/4 tsp. ground cumin
3/4 tsp. chili powder
1 can tomato sauce
1 can diced green chilies
1/4 lb. Jalapeno Jack cheese, shredded
2 cup unseasoned stuffing mix
2 tsp. salad oil
Twist mushroom stems free, trim off dried ends, and finely chop stems.
Saute stems, onions, garlic in oil. Add cumin, chili powder,
tomato sauce, and chilies. Mix into stuffing mix and stuff mushrooms.
Cover all with Jack cheese and bake at 350 F for 30 mins. or until
cheese is bubbling.
