Back when I was a chef (that's right, let's reminisce with a
freakin' 23-yr-old) our restaurant served ostrich
tenderloins and breast. Absolutely bizarre the first time
you dealt with it - looked like a steak, felt like chicken,
smelled like neither. Also, it's real easy to overcook and,
when cooked properly, looks a bit like undercooked poultry.
Diners would routinely send back perfect meals.
Imagine sautéing thick/tough chicken breast in beef broth,
and you know what it's like to eat ostrich. It's better than
I just described it, though.
