Thought I would share with you the delicious Morrocan dinner I cooked last night. I searched through
RFC and found 'Morrocan Lamb Tagine with green olives and lemon' and 'Tunisian Couscous with Fennel,
Red Peppers and Garlic'. The first recipe was prepared over several hours and the Couscous I cooked
just prior to dinner having all the spices and vegetables cut up and prepped ready to go. Of course
I do not have a couscous cooker, but it worked quite well in a lidded sautepan adjusting the cooking
times as necessary. The chopped greens I nuked in the microwave. With these two dishes I also served
glazed baby carrots which were pre-cooked and then quickly sauted in a little butter, brown sugar,
cinnamon, cummin and salt and parsley. Hot Turkish bread on the side. Dessert was fresh summer
fruits and honeyed yoghurt. My husband is currently battling thrombosis in the leg following
achilles tendon surgery, so it is best to ask friends in to dine rather than arrange to go and then
have to cancel at the last minute. He truly enjoyed this dinner last night as did our guests. And,
poor chap, he has been admitted into hospital again this morning with allegies to the drugs. Ugh,
