MTB Upgrades for a Newbie

Hi All!
This is my first post into the world of cycling..
I just bought a bike about a month ago and have became more and more fascinated by the scene after looking around bike stores and online.
My bike will mostly be for riding around town at college and gravel trails, but I am looking to get some upgrades for the fun of it and in case I start to do some more "off road" riding.
My bike is a Giant Boulder SE (yes, quite basic, I know) but I love the look and it seems to have a real nice frame, if a bit heavy. The kind folks at the bike shop put on some thinner 1.5" tires for the road, that I really dig.
So I figure with some upgrades, I could have a pretty decent low-end mountain bike should I decide to get more serious about things.
So here's some of my ideas, please remember that I am quite new at this so any helpful advice would be great:
Definately would like some better grips and some new pedals would be a possibility.
Should I consider a better front suspension? (fork, right?)

What else should I be thinking of? What are my first priorities?
Specific models of items would be gladly appreciated, also. Thanks all!
