for that. With gas, I'd go for round bottom with ring, and carbon

needed or wanted, especially with an electric stove. And steel,
hammered or forged, is preferred., Though the thin Chinese cast iron
is okay, don't even look at anything with a nonstick surface. Here's

She mentions her 14" flat-bottomed, carbon steel wok a little more
