The Business section of the New York Times as a very interesting
article on the decline of the "low-fat" fad and the food
industry's response to consumers new view on fat.

"... Harry Balzer, vice president at the NPD Group, said one
reason low fat was such a profitable trend for food companies was
that it erased consumers' guilt about eating products that were
essentially not very healthy, like potato chips, cookies,
crackers, ice cream and processed lunchmeat."
